Herbs Used by the Vikings

Herbs were essential in all aspects of life for the Vikings. Many of the plants grew wild, some were traded, and others were grown in the healer’s garden. They used them for seasoning food, brewing beverages, healing, as well as for rituals and spells. Vikings knew that keeping the spirits happy was important. Health was not just the absence of illness, it was an integral part of honor, strength, and survival.
Holly Shimizu served as the first Curator of The National Herb Garden. She worked closely with the Herb Society in developing the garden and educational programs. She went on to other positions including as Executive Director of the US Botanic Garden in Washington DC. Her love of herbs continues, she grows and uses a vast array of herbs in her life. She serves on the Board of The American Horticultural Society and The American Botanical Council.
